If a licensed architect is working on a project during CA as a Construction Administrator, under a firm and is no the architect of record, can they be sued and loose their license if a project ends up going through arbitration or litigation? Is that a thing?

An architect can be held liable for performing any professional services.

Be aware that you are not taking the bar exam. You are not expected to be able to adjudicate situations.
